Mulled Wine Is a traditional Austrian Christmas Wine , often enjoyed as part of a festive Austrian market.

The tradition for making and drinking mulled wine at Christmas is as old as Christmas its self. Other beverages such as Cider are also Mulled at this time of the year.

There are many recipes for Mulled Wine and Mulled Ciders, most involve heating up the beverage and mixing it with mulling spices such as Cloves, Orange, Star-anise and of course Cinnamon and Nutmeg.

    ingredients

2 x 750 ml Bottles of Merlot (Red wine)
    500 ml Water
    2 Lemons (Cut into Slices)
200 g of Soft Brown Sugar
    8 Cloves
    2 Cinnamon Sticks
    1 Orange (Cut into Slices)
    1 Vanilla Pod
    1 grated Nutmeg
    2 Star Anise
    2 Bay Leaves

    Cooking Instructions

There are many ways of making Mulled Wine and I am going to mix the traditional with the modern. We are going to boil the fruit and spices in a pan but warm the wine and hold it in a slow cooker.

Before we start we need to split the Vanilla pod by slicing it down the middle and cut up the fruit into segments, then set the slow cooker to High.

    1. Put the Lemons , Water , Brown Sugar , Cloves , Cinnamon , Oranges , Vanilla Pod , Nutmeg , Star Anise & Bay leaves into a large pan and bring to the Boil, then simmer for 10 - 15 minutes.
    2. While the pan of festive fruit and spices are simmering on the stove you can empty the two bottles of red wine into the slow cooker.
    3. When the pan has been simmering for 15 minutes and you can smell the aroma of the spices, remove it from the heat and empty it into the slow cooker with the wine mix together.
    4. Put the lid on the slow cooker and reduce the heat to Low for 30 minutes to 1 hour before serving.

    Chefs Tips

The great thing about making Mulled Wine this way is that it will keep for days on warm in a slow cooker, if you can resist the temptation to drink it that long.
