The full English breakfast is often made up of Sausage, Bacon, Eggs, Tomatoes, Hash Browns, Beans and Toast. This recipe puts most of those breakfast ingredients into a convenient snack, wrapped in a parcel of smoked bacon.

All you need are some muffin tins to get this recipe for breakfast bites on the go, you can even chose your own ingredients, Black pudding, bacon and eggs.

    Full English Mini Breakfast

    The full English Breakfast is as British as Fish 'n' Chips. But each nation has its own version of the Breakfast.

    In Scotland you are most likely to get a flat sausage and haggis with your breakfast.

    The Welsh version of the full breakfast is pretty much the same as other versions except you can expect to get laverbread and cockles with it.

    One thing is for sure, no matter where you get your breakfast from is your choice of eggs, Fried, Scrambled or even poached are available.

    2 rashers of Smoked Streaky Bacon
    1 slice of Black Pudding
    Sausage Meat
    Scrambled Egg

    Ingredients #2
    2 Rashers of Smoked Streaky Bacon
    1 Slice of Tomato
    Sausage Meat
    1 Slice of Mushroom
    Scrambled Egg

    Cooking Instructions

    1. Mix 2 eggs in a bowl with a fork.
    2. Tip the eggs into a pan of hot butter and scramble with a fork. Set aside in a bowl.
    3. Using a standard set of Muffing tins (12 moulds)
    4. Lay two rashers of streaky bacon in a cross shape into a mould, leaving the ends loose.
    5. Choose one or mix and match the ingredient and start to fill the moulds with each ingredient.
    6. Layer #1, Black Pudding
      Layer #2, Sausage Meat
      Layer #3, Scrambled Egg

    7. Do this in any order you like.
    8. Fold the bacon in a crisscross over the top of the fillings.
    9. Bake in a preheated oven @ 180 c for approx. 25 minutes or until the bacon is crispy and brown.
    10. Remove with a fork.

    These Mini Breakfast Bites are ideal buffet food or you can serve them as a morning snack with some ketchup.
